KidsBites LunchBox Helps Single, Working Mom Fight Hunger
“Being a mom is the best job I have ever had,” says Melanie Hudson. “I would never trade it for the world.”
In addition to being a rock star single mom, Melanie is a personal care assistant at an Upper Darby Middle School as well as an adult student at Eastern University. In the summer though, her paychecks are stretched thin as regular bills compound with time off and the absence of free or reduced-cost meals that Melanie’s 17-year-old daughter, Veronica, usually receives during the school year.
“Food stamps are often not enough, so I’m extremely grateful for the fruits and vegetables that Fresh For All in Upper Darby provides all year long, and especially in the summer,” says Melanie. “I’ve also become more creative as a cook from all the different veggies, helping us eat better.”
Additionally, thanks to generous support from Giant Our Family Foundation, Philabundance is able to help fill the summer meal gap for families like the Hudsons by offering healthy boxed lunches to youth under age 18 at all eight Fresh For All locations.
“I’m so grateful for the KidsBites lunchboxes,” Veronica shares, “especially because I often sees adults at the program receiving food; it is nice to be included in a program just for me.”
The fresh produce from Fresh For All has helped fuel Melanie’s work ethic over the years as she has earned an associate’s degree in Science and Leadership Development at Harcum College and will receive her bachelor’s degree from Eastern University this August, where she is in the Accelerated Adult Program.
Before her current teaching job, Melanie volunteered with the Friendship Circle, delivering meals to seniors, and spending time with them over lunch and board games. She believes in the power of giving. Although she is need of food assistance, Melanie makes monetary donations to Philabundance when she can to help provide to others who are in need.
