Letitia Selects a Butternut Squash

Try this simple but tasty butternut squash pie recipe from Letitia, a Fresh For All Client and single mom who says getting kids to like veggies isn’t as hard as it seems. “People think kids won’t eat fruits and veggies, but they do! They just need to get used to seeing them, which is why I cook most of our foods from scratch and appreciate Philabundance helping us incorporate those good vitamins into our diet.”


2 large butternut squash
2 frozen pie crusts
1 stick of butter
1 cup of brown sugar
1 egg
1/2 can of sweetened condensed milk
1/2 can of evaporated milk


-Preheat over to 350 degrees

-Peel and cut up squash into even pieces, boil until tender (about 20 mins)

-Drain the squash and let cool

-Mash squash, then mix in the rest of the ingredients to taste

-Pour mix into pie crusts and bake until pies set (about 30-40 minutes, or until a fork inserted near the center comes out clean)

Pro Tip: Sneak in some cooked, mashed carrots — you’ll get the added nutrients but nobody will be able to tell!
